iPhone 3GS Recovering Photos After Reset and old backup sync

Out of the blue, my iPhone 3Gs showed that "plug into itunes" icon yesterday, so I did so, and it informed me that I needed to ""reset to factory settings." So, I did, and went to restore from a backup, but the most recent backup was on June 4th. I realized the date after I started to sync my phone, so I promptly unplugged it, so it is half synced to the backup from the 4th now. I've noticed that when I plug in my iphone this folder, "ipod photo cache" updates with ".ithmbs," I converted them to jpegs with software, but none of the photos I was looking for were there.

I had a lot of important family photos/videos on there before the reset/wipe/and subsequent partial restore. Does anyone know if there is a way for me to get back those photos and videos from the past 2 months on either my computer or on my iphone after everything it's been through, or is it too late?

Does anyone know if every time the iphone backs up, if it backs up to hidden files? Compressed files? I have a mac computer, but have access to a microsoft operating system if there is software compatible with that. Any help would be appreciated. Thanks!!
