iPhone randomly removes music, needs to be re-downloaded?!?

Hey folks, I have had I think 4 generations of iPhones but I have only noticed this problem on the 5S. I buy all of my music from iTunes (with some legacy music from the pre-iTunes era), but for some reason my iPhone randomly decides to delete some songs from my phone and force me to re-download them over the net. If I'm in the US with my LTE connection, this isn't too bad of a problem, but if I'm on an airplane, or overseas with limited data network, this is a big problem.

As an example, I'm in Mexico right now and on the flight I wanted to listen to the latest Daft Punk album. I searched for Get Lucky and hit it, but as soon as it loaded the song in the Music app, I could visually see the app skipping that song and every other song of the album. Then the little cloud download icon shows up next to them. This happens to me occasionally but what I really can't figure out is WHY it is doing this and more importantly how do I stop it!?

I at first assumed it has something to do with iPhone sync'ing on iTunes which is always a nightmare since iTunes insists on copying and transferring so many things back and forth. In any case, I confirmed that under iTunes/iPhone/Music, Sync Music is checked and "Entire Music Library" is checked. I have 10GB of storage left on my 64GB iPhone so space isn't a problem....

Has anyone encountered this? Any solutions in mind? I googled around a bit for "iphone music disappear cloud" but usually people are just talking about iTunes Match.
