My meticulously edited tags are not showing up on my iPhone 5s

Greetings.

I am quite anal about the way I tag my digital music library. After downloading a song from iTunes or ripping a CD, I use Mp3tag to edit the tags. I keep things extremely simple: title, artist, album, artwork, track number, genre, and sometimes a comment. After editing in Mp3tag, I then open said purchase/rip in Foobar and further edit the tags through Properties, deleting total tracks, album sort, purchase date, and a bunch of other superfluous iTunes metadata. I then add to my iTunes library, transfer to my iPhone 5s, and everything is in it's right place.

Yesterday I made quite a few purchases directly from my iPhone, transferred my purchases to my iTunes library when I got home, moved the folders to my preferred location on my hard drive, edited per the aforementioned process, imported to iTunes, and transferred back to my iPhone.

While my tagging efforts are showing up the way I would like in iTunes (and my old Touch running iOS 6), they are not being reflected on my iPhone's music player.

Allow me to illustrate. I am compiling Radiohead singles and EPs. I purchased the Fake Plastic Trees EP as well as the single. I then combined the tracks into one folder and tagged them as one album "Fake Plastic Trees." This is reflected in my iTunes library. However, on my iPhone's music player, it is showing up as two separate albums "Fake Plastic Trees - EP" and "Fake Plastic Trees - Single." The track titles, track numbers, and artwork show up correctly, but it is splitting them up into individual album purchases and not reflecting the album name I gave. Another example: I purchased "The Daily Mail / Staircase - Single" and retagged it as "The Daily Mail / Staircase." It shows up fine in my iTunes library but not on my iPhone's music player. I have other instances of being able to sort my music by composers on my iPhone even though I do not include this information in the tags and composer information is not reflected in my iTunes library.

Anal? Perhaps. But I would greatly appreciate some of the forum's Delphic wisdom to help alleviate the OCD meltdown I'm about to have.
